Ingredients - 1kg (skin on) large potatoes (Maris Piper are good for this)- 250ml (1/2 pint) whipping cream - 2 cloves of garlic, chopped (the smaller you chop it, the stronger the flavour gets) - 1/2 tsp salt - 20 twists of black pepper (don't be shy) - A little fresh nutmeg and/or a large pinch of 50g (2oz) grated cheese. A good Gruyère or Raclette is perfect. - An oven proof dish about 20x15x5cm - Aluminium foil |

Method 1. Turn on your oven and set to 180 degrees Celsius. 2. Pour the cream into a large bowl and add the salt, pepper and nutmeg. Add the garlic, remember if it's lightly chopped the dauphinoise will have a subtle garlic flavour. The more you chop it, the more intense the garlic will become. Whisk all of this together to combine the ingredients, but not to make it thick. It'll only take 10 seconds. 3. Peel the potatoes, and slice as thinly as you can. If you have a mandolin, you'd want them to be about 2mm thick. Add the potatoes to the cream mixture, and give it a good stir. Make sure each slice is well coated with the cream. Pour the potato and cream mixture into the oven dish. Lay the slices flat making sure they are as level as possible, pushing right to the edges of the dish. 4. Cover the dish tightly with aluminium foil and bake in the centre of the oven for 45m -1hr, or until when prodded with a knife, the potatoes are soft but not mushy. When cooked, remove the foil from the dish and sprinkle the top with cheese. Turn up the oven to 200 degrees Celsius and place the Dauphinoise back into the oven for 10 more minutes, by which time the cheese will have melted and started bubble. 5. If you can wait, allow it the stand for 5 minutes before you tuck in. That will give it time to set and make it easier to serve. If there are any left overs, they will re-heat very well. Simply sliced into wedges and placed in the oven or just under a hot grill for a couple of minutes. A quick and very rewarding warm baguette filling! |
