In the last year La Tasca has been reinvigorated with a new emphasis of focussing on fresh, Iberian-sourced ingredients resulting in a culinary 'Spanish Revolution'. Antony Bennett, Executive Chef, has searched all over Spain to find the best local producers and has sourced some truly authentic produce to use in each of their new dishes. These divine ingredients include Salchichon, a traditional strong-flavoured cured sausage from Pamplona; Chorizo Herradura, cured and gently wood oak smoked meat from El Bierzo in Leon; Manchego cheese, produced by a fourth-generation family with a process passed down by their great-great grandfather, in La Mancha; and Pimenton De la Vera, a very select paprika grown in the perfect conditions of Pimenton de la Vera Do.
